Cheesy Hashbrown Casserole Recipe...So Easy Even I Can Make It!

If there is one thing that everybody knows by now it is that I am NOT a good cook. I have tried and tried, it just doesn't work out most of the time! *LOL* So I have been really getting some great cookbooks that have easy easy recipes that even I can make and I found an awesome recipe for Cheesy Hashbrown Casserole out of the Southern Plate cookbook by Christy Jordan. I have to tell you, I LOVE this cookbook! It should be called Cooking for Dummies because the recipes are so simple! Anyway, you can pair this casserole with just about anything but I prefer to have it with a nice big breakfast or it goes especially great with a Baked Ham!


One 10.5 Ounce Can Cream of Chicken Soup
1/2 Cup Chopped Onion (If I make it, I totally cheat and buy already chopped onion. Cutting it makes me cry *lol*)
1/2 Cup (1 stick) Margarine or Butter
1 Tsp Salt
1/2 Tsp Pepper
2 Cups Grated or Shredded Cheese
2 Pounds Frozen Hash Browns thawed (It called for the shredded kind but I like to use the cubed ones instead)

How to Make:

Preheat Oven to 350 F
In a large bowl, combine the soup, onion, melted butter, salt & pepper
Stir Well; Stir in Cheese and Potatoes

Place in a 9x13-inch dish and bake until bubbly. If you use the shredded hashbrowns, it takes around 30 minutes. If you use the cubed potatoes like I use, it takes around 45-60 minutes. I just keep checking until the potatoes aren't hard anymore.

ENJOY! This is a dish you will make over and over again!

If you want to make an easy Baked Ham with it, the recipe in this cookbook is insanely simple. Just take 1 cup of Pancake Syrup and cover a Bone-in Ham with it! Stick the ham in a pan lined with foil and wrap the foil up around the ham. Bake for 30 minutes per pound and every once in awhile, open it up and brush the syrup up over the ham to keep it good and glazed. Bake the last 30 minutes uncovered and that's it! Easy peasy!  So simple that even I can do it so I know you can!

We will be having this Easy Ham and Cheesy Hashbrown Casserole this weekend for our Sunday Dinner! Mmmmmmmmm.
