Garden Gazpacho from Hormel Foods

The great thing about living in rural Ohio is that the farmers markets are plentiful! You can even drive down any given street here where I live and you will see people selling goodies that were grown in their gardens. This is why I thought the Hormel Foods recipe for Garden Gazpacho was perfect to share!!! I like this recipe because it's so easy to make ahead so you aren't scrambling the day of your get together!

Garden Gazpacho


3 cups chopped peeled seeded tomatoes

1 cup CHI-CHI'S® Thick & Chunky Salsa Mild

1 cup tomato or vegetable juice

1 cup boiling water

1/2 cup chopped peeled seeded cucumber

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped yellow bell pepper

2 tablespoons snipped fresh basil or 1 teaspoon dried basil leaves

1 tablespoon mild olive oil

1 tablespoon lemon juice

2 teaspoons Herb-Ox® Beef Instant Powder

1/4 teaspoon Bufalo® Especial Hot Sauce



1.In large bowl, combine all ingredients except croutons; mix well. Cover; refrigerate several hours or overnight.

2.To serve, ladle soup into chilled bowls or mugs. Top each serving with croutons.
