Garden Potato Salad

I mentioned a few days ago how fresh garden veggies are plentiful here where we live so I thought I would share this awesome Garden Potato Salad recipe that I found from Hormel Foods!!  It takes under 30 minutes to prepare and it is sure to be a hit with your guests!!!

Garden Potato Salad


Ingredients:

16 red new potatoes

3 green onions, cut into 1/2-inch slices

3/4 cup creamy cucumber salad dressing

1 head red leaf lettuce, torn into bite-size pieces

1 sprig fresh dillweed

1 (6-ounce) package Hormel® Canadian Style Bacon, cut into 1/2-inch strips

2 hard-cooked large eggs, peeled and cut into 1/4-inch slices

1/4 teaspoon paprika

Salt and pepper, to taste

Directions

1.In large pot, boil potatoes in 2 quarts salted water 10 minutes or until tender; drain. Cool. Cut cooled potatoes into 1/4-inch slices.

2.In medium bowl, toss together potatoes and onions. Gently stir in dressing. Season with salt and pepper.

3.On each of 4 plates, arrange lettuce. Top evenly with potato mixture; sprinkle with dillweed. Add Canadian bacon and eggs. Sprinkle with paprika
 
This is definitely one to keep on hand!!!
