Bacon and Egg Breakfast Biscuit Recipe from Hormel

School's in session and now we are on a tight morning schedule. The kids get up at 6:30 and they have exactly 1 hour to get ready, eat breakfast, brush their teeth and get on the bus.  I like for my kids to have a good breakfast so for the next several weeks, I am going to be sharing some quick and easy recipes that you can make for your kids before school. I like these recipes because I can make the food while my kids are getting ready and then they get to enjoy a good breakfast....not just a pop-tart or a bowl of cereal! Or, if they get ready in time, let them join in and help!

Bacon and Egg Breakfast Biscuit

1 (16-ounce) can refrigerated buttermilk biscuit dough

8 slices Hormel® Fully Cooked Bacon, crisply cooked and cut in half

1 tablespoon butter or margarine

8 large eggs

8 (2/3-ounce) slices American pasteurized processed cheese

Salt and pepper, to taste


1.Bake biscuits according to package directions; keep warm.

2.Cook bacon according to package directions.

3.In medium skillet, melt butter over medium heat.

4.In small bowl, combine eggs, salt and pepper; blend well. Add to skillet. Cook, stirring occasionally, until egg mixture is almost set but still moist.

5.Split warm biscuits. Spoon egg mixture evenly onto bottom half of each biscuit. Top each with cheese and bacon. Cover with top biscuit halves of biscuits
This recipe is very quick and easy! Throw some fresh fruit on the plate and they have a balanced breakfast to get them started for the day!
