Easy Breakfast Burritos

Breakfast Burritos have become pretty popular in recent years in kitchens across America. I have been looking for an easy recipe and finally found one from Hormel Foods that you can prepare in under 30 minutes. This is perfect for those busy mornings before school!

Breakfast Burritos



Ingredients:

12 large eggs

2 cups shredded Mexican cheese blend, divided

1 (3-ounce) jar Hormel® Real Bacon Bits, divided

2 tablespoons butter or margarine

6 (6-inch) flour tortillas

1 cup CHI-CHI'S® 16 oz Thick & Chunky Salsa Medium

Directions

1.In large bowl, stir together eggs, 1 1/4 cups cheese and 1/2 cup bacon bits.

2.In large nonstick skillet, melt butter over medium heat. Add egg mixture; cook, stirring frequently, 5 to 8 minutes or until eggs are set but still moist.

3.Meanwhile, wrap tortillas in plastic wrap. Microwave on HIGH (100%) 30 to 60 seconds or until warm.

4.Spoon egg mixture down center of warm tortillas. Top each with salsa and remaining 3/4 cup cheese and bacon bits. Roll up tortillas burrito-style. Serve immediately.

The kids love to make these too so if time allows, let them help!
