St. Patrick's Day Treat

I have to admit...with St. Patrick's Day around the corner, I have been seeing nothing but pots of gold and rainbows so I have been on the hunt for some more tasty treats for my family! We love our St. Patrick's Day Rainbow Cupcakes but I have been on the lookout for a little healthier treat and I think I finally found it! A friend recently introduced me to the simplest yet most delicious looking rainbow fruit platter for St. Patrick's Day and I fell in love! It is the cutest thing, using fresh fruits for each color of the rainbow, mini marshmallows for the cloud and individually, gold wrapped Rolo candies for the pot of gold at the end of the rainbow!!!


The best thing about this simple yet super yummy treat is that you can change things up however you want. If you don't like strawberries, try red raspberries!  Not a fan of pineapple? Try bananas instead. The sky is really the limit here!  We have tried a couple of variations now since all of the fruits aren't really in season here in Ohio. If I make this sometime in the summer, I would love to swap out the darker grapes for some fresh blackberries!!!! And if you don't have enough fruit to make one big fruit platter, the other morning we made rainbows on the kids plates for breakfast! They had so much fun playing with their fruit and making rainbows on their plates!
