According to a recent survey conducted by ORC International, nearly half of Americans crave Mexican food more than once a month, but more than 60 percent of Americans say they don't often prepare Mexican food at home because they don't know how to make it. 2/3 crave Mexican food at least once a month, yet 37% of those don't prepare the cuisine at home. In addition, Americans are most likely to eat Mexican food when it is prepared at a restaurant as 1/3 claim that making Mexican food at home doesn't taste like it does in the restaurant.

Refried Bean Roll-Ups (lighter recipe )

Lighten up!  You can enjoy great-tasting seasoned refried beans, lettuce and cheese in soft flour tortillas and still keep an eye on the fat.

Prep Time: 10 Minutes
Total Time: 15 Minutes
Makes: 4 servings (2 roll-ups each)


1 can (16 oz) Old El Paso® fat free refried beans
½ cup Old El Paso® Thick 'n Chunky salsa
½  teaspoon chili powder
8 fat-free flour tortillas (8 to 10 inch)
1 cup shredded lettuce
½  cup shredded Monterey Jack cheese (2 oz)


1. In 1-quart saucepan, heat beans, salsa and chili powder over medium heat about 5 minutes, stirring occasionally, until warm.

2. Spoon about 1/4 cup bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Roll up tortillas. Serve with additional salsa if desired.
