Easy Baked Apples

Our countdown to Very Hungry Caterpillar Day (March 20, 2013) begins today! On Day 1, the Very Hungry Caterpillar ate through one apple! Enjoy a quick and easy snack like sliced apples and peanut butter with the kids today or try our recipe below for delicious "baked" apples in the microwave!!!

Easy Baked Apples


4 Apples, cored with the bottom in tact
4 Tbsp. brown sugar
1 Tsp. ground cinnamon
4 Tsp. butter


* In a bowl, mix the brown sugar and cinnamon together. 

*Spoon the sugar mixture into each of the apples

*Place 1 Tsp. of butter on top of each apple

*Place the apples in a microwave safe dish

*Cook in microwave for 4-5 minutes. Allow to cool 1-2 minutes before serving. If you would rather bake, you can bake these in the oven at 350 degrees for approximately 35 minutes. My kids love these just as they are but I hear they are absolutely delicious with a scoop of vanilla ice cream on top of them! 

You may also slice the apples up, sprinkle them with the mixture and then spoon melted butter over the top of them as an alternative treat! Bake as directed above. This might be easier for smaller children to eat!
