I just started a 21 day clean eating challenge and today is Day 3. I feel better than I have felt in a LONG time. I was really worried when I first started out because I live for my Diet Mt. Dew and my snacks but I am so excited about how well I have been doing on the challenge. One of the things I have been doing is trying to find easy recipes that are quick, inexpensive and that taste good and I am so excited that I found a black bean burger recipe that is SO easy to make that I actually enjoy eating. This recipe makes 4 burgers and the cost ends up being less than $2 for the entire recipe. SCORE! P.S. The looks are deceiving. I know they don't look the most appetizing but I PROMISE they are delish!
Easy Black Bean Burger Recipe
1- 15 ounce can of black beans
1/3 cup Instant Oats
Step 1: Drain and rinse your beans thoroughly
Step 2: Dump the beans into a bowl and gently mash them with a fork. They don't have to be completely mashed but I shoot for about 80%
Step 3. Add 1 tsp each of garlic powder, onion powder, ketchup and mustard and mix either with a spoon or your hands. Next add in your oats and mix thoroughly.
Step 4: Make into 4 patties. Place on a baking sheet and bake for 7-10 minutes on each side or until there is a nice brown crust on each side.
Step 5: Eat as is or put on a whole grain bun, add veggies and ENJOY!
