It is quite possible that I am now borderline obsessed with finding new, healthy recipes to support my new clean eating initiative. The more I learn, the more I am finding that the stuff in the stores is just not good for me. Even staples like peanut butter are filled with sugar and stuff I can't pronounce. When I thought about making my own peanut butter I figured it was going to be a huge task but when I realized it was actually quite simple, quick and inexpensive I was stoked.
You only need a few ingredients to get you started. Roasted peanuts sea salt, honey and grapeseed oil. I was able to find all of these things at my local Walmart. The grapeseed oil is a little pricier than regular oil but its going to last you a long time so it's a worthwhile investment.
Start by putting around 2 1/2 cups of peanuts in your food processor.
Turn it on for about a minute and you will have the start of peanut butter. This takes a little patience but trust me, it works. You are going to have fine, ground up peanuts at this point.
Now turn your food processor back on and let the peanuts do their job. It's going to go from a sand looking mixture into a wet ball. I run it for a minute at a time and scrape the sides after each cycle. After a couple times, the peanuts are going to turn into a wet ball of yes, you guessed it, peanut butter!!! At this point give your food processor a break and add 2 tsp of grapeseed oil and 2 tsp of honey. You can also add 1/2 tsp of sea salt at this point. I buy unsalted peanuts but if you go with salted, you might want to leave the salt out.
Turn the food processor back on and continue with a couple more 1 minute cycles and watch in excitement as you have just made your very own, healthy, clean peanut butter!!!
I am still amazed by this process and how simple it is. Now I have my own healthy peanut butter that I can eat on sandwiches, with fruit slices and even in my smoothies and protein shakes and all without the guilt!!! It really doesn't get any better than this!
